5/24 - Saffron Salmon
Tonight, we went back to the Old Town of Paphos, back to where we had coffee to have probably the fanciest dinner that we will have had in our entire Cyprus trip. We took a taxi up to the top of a hill with a beautiful view of the Paphos shoreline, and while we waited for our food, had a little photoshoot. Previously, we had gotten photos during the daytime when we went for coffee, but during the night, the scenery seemed to have changed completely, along with the vibe of the restaurant. It had gone from a quaint coffee venue with a beautiful view to a neon-lit fancy restaurant overlooking the city.


For dinner, I had Saffron Salmon, which came with a thick cut of Salmon with risotto and vegetables cooked in the saffron sauce. It was probably the best salmon that had ever graced my taste buds, and that's really not overstating anything. The sauce was creamy and just heavy enough to pair very well with the meatiness of the salmon, and while the vegetables lightened the dish up a little, the risotto did just enough to compensate for it.
